Something For The Wife

I'm going to try and make a spicy wheat beer for the wife as she hurts my pocket everytime i go to tesco. She loves Hoegaarden so i'll try and get something simar to that.
I know i should prob use Lager or pilsner malt but i've got a big sack of MO so I'm just going to use that. I'm unsure what type of wheat to buy for the recipe if someone can point me in the right direction. Here is the recipe;

mash 90mins
2500kg maris otter
2500kg wheat (I'd like someone to tell me which type)
500g porrige oats boiled for 20minutes first. (apparently they help the mash out).

I have a few different types of hops so any suggestions would be grateful;
EKgoldings
fuggle
target
challanger
styrian golding

I'll add 15g of crushed corriander seeds and 10g orrange peel for the last 5 mins of boil

no clearing agent needed

And for the yeast i have some s04 & s05, but i think it may be worth buying a different yeast maybe t58 or should i but a liquid yeast?

All tips and help needed!!!

Heres what I am brewing next. Its based on other Hoegaarden Clones, and I believe it will be better!

Summer Garden

Fermentables

Lager Malt 2.5 EBC 5 lbs. 0.9 oz 2300 grams 40%
Torrefied Wheat 4 EBC 4 lbs. 8.6 oz 1610 grams 28%
Wheat Malt 3.5 EBC 4 lbs. 8.6 oz 1610 grams 28%
Wheat Flour 0 EBC 1 lbs. 8.0 oz 230 grams 4%

Hops

Perle Whole 6.3 % 90 mins 0 lbs. 0.9 oz 27 grams 100%
Corriander last 3 mins
Grapefruit Zest at end of boil
Orange Zest at end of boil

Wyeast 3944: Belgian Witbier or any Belgian Wit Yeast
Final Volume: 23 Litres
Original Gravity: 1.055
Final Gravity: 1.013
Alcohol Content: 5.5% ABV
Total Liquor: 34 Litres
Mash Liquor: 14.3 Litres
Bitterness: 18 EBU
Colour: 6 EBC

Defo my next brew and i think i'll get my camera out for the first time and show the world. Probably sometime next week, once i make my mind up on the recipe.
