I found this recipe in Norms Almanac.

IMPERIAL RUSSIAN STOUT John Smiths Tadcaster.

25l batch OG 1102 ABV 10% 235 units of colour 50 units of bitterness.

PALE MALT 5955 gms
AMBER MALT 2134 gms
BLACK MALT 284 gms
SUGAR 1594 gms Added to boiler.

HOPS boil time 90 minutes

TARGET 89 gms

I suggest one of the high gravity yeasts WHITE LABS Super HIgh Gravity WLP099.
This is one of the strongest beers brewed in Britain and needs BOTTLE CONDITIONING,and a long maturation time.

I ended up with just over 27 litres at 1.095 (IIRC) when I was aiming for 1.102, but I should have simply boiled for another hour to achieve that.

:oops: I don't know :shock: . . . I put it into a corny at the end of October, and it has stayed there ever since . . . . I'll probably bottle it in September for Christmas 2010

Edit: I have found some tasting notes from when it was transferred into the corny
On the aroma side, there is treacle, with rich plummy raisin notes, and a definite hint of peppery spiciness.

Initial taste notes are bitter chocolate . . . incredibly bitter . . . . peppery spice, big mouth feel . . . not so much sweetness as expected, but a definite presence on the front of the tongue . . . long finish
