Hammonds 1903 Yorkshire Pale

Whilst reading through back issues of The Brewery History Society magazine the other night I came across an article by Keith Thomas of Brewlabs.It was entitled Beers Of Yesterday and concerned records of Hammonds brewery for 1903 a range of beers was listed along with percentages of malt. i thought one of the beers suitable for turning in to a homebrew recipe.Hammonds Yorkshire Pale.

HAMMONDS YORKSHIRE PALE OG 1042 34 EBU 25 Litre Batch

PALE MALT Hammonds listed three, Yorks Pale, Chilian Pale and Foreign Pale. MASH TEMP 70 c
So PALE MALT MARRIS OTTER 1550 gms
BELGIAN PALE MALT 1550 gms
FLAKED MAIZE 705 gms
GLUCOSE 454 gms
BREWERS CARAMEL .5 gm

HOPS It was stated that a Mid Kent hop was used.
So FUGGLES HOPS 80 gms.Boil 90 minutes
Add 15 gms hops last 15 minutes.

It was also stated large ammounts of gypsum were used 50 lbs per 180 barrels.Therefore 18 gms gypsum should be added to water treatment.Alo 30 lbs salt and calcium carbonate was added.The author thought the salt was excessive so I leave that To you.It works out at 10 gms.
