Honey-Ginger Brown Ale

I'm not much for spiced beers but I do like ginger and first made this beer about 10 years ago as a bride's ale for my neice's wedding. It was very well received and I have brewed it many times since.

23 Litres transposed from 10 US Gallons

2.8Kg pale malt
300g Crystal 55L
225g Chocolate wheat malt
300g CaraFoam
1.1Kg Wildflower honey or your favorite variety (added @ knockout)

50g EK Goldings @ 60 minutes
17g EK Goldings @ 30 minutes
50g finely shredded fresh ginger @ 30 minutes
15g finely shredded fresh ginger @ 5 minutes

Mash 60 minutes @ 67C

Wyeast 1028 London Ale yeast

Not sure what CaraFoam is though??
Presumably "knockout" is another way of saying "flameout" or in my case "leccyoff".

Never mind, just seen your other post:
CaraFoam is Weyermann's version of a dextrine malt or CaraPils.

Thanks, bob. This turned out to be a nice beer. It's light enough for the non good beer drinkers and beery enough for the good beer drinkers. :wink: Yes, knockout = flameout = end-of-boil. I wasn't sure what the common term was in the UK.
