First and Second AG recipes, thoughts?

The first recipe I am going to do will be the Four Shades of Stout that Garth did. But scaled down to 25 Litres or there abouts, the amounts may not be exactly right so tell me if there is anything I should change.

This is what I came up with:

Maris Otter 4Kg
Flaked Barley 0.8Kg
Amber Malt 0.3Kg
Roast Barley 0.25Kg
Carafa III 0.25Kg
Chocolate Malt 0.2Kg

Mash at 66C

Cascade 50g 8% a.a 60 minutes.

Nottingham Ale Yeast

That sound all ok?

Second AG...

I was thinking I like American very hoppy IPA's

I was thinking of using the Cascade I dont use in the 4 shades of stout, then getting some amarillo. Using it and dry hoping with some amarillo too.

I was thinking:

5Kg Maris Otter
0.5Kg Carapils
0.3Kg Crystal Malt

Can anybody suggest a hopping schedule for me. Was going to use Nottingham for this one too.

I was going to order the stuff this evening.

I am such a noob, with hop schedules.

After some searching I am going half inch a hop schedule from adm and modify it slightly.

Amarillo 25g 90mins
Amarillo 25g 15 mins
Cascade 25g 15 mins
Amarillo 25g Flame Out
Cascade 25g Flame Out

Plus dry hop with the 25 grams of Amarillo that is left. :mrgreen:

A shame you've been left with no answers really mate. I like the look of your AIPA. Nothing wrong with your 4sos either. Can i point you in the direction of homebrew classics india pale ale book from camra. Its a good read and the historic recipes are great. HUGE amounts of hops and some equally large ABV's. I'm going to use US05 in my IPA. Nothing wrong with Nottingham though, it won't get in the way of the hop aroma. What sort of ABV are you looking to achieve? I take it your volume is still 25ltrs ABV? Look forward to seeing your progress in the brewday section. I'm hoping to get my recipe together to make later next week so i'll post as well. See bottom of my sig for another good shop.

Its ok, :).

I was thinking around 6% ish, 1055OG and 1009 OG with the nottingham, I went with it rather than US05 because I dont have the money to buy a chiller, so I am trying to minmise the risk of cloudyness, in the short term at least.

I would have gotten it from the barley bottom, but I wanted the Carafa III for the FSOS and some 5/8" syphon tubing.

05 clears perfectly if you are patient - and can condition at 10C or lower (it probably also clears perfectly at higher temps, but I can't say for sure). 3 weeks max from racking for me and it's always crystal clear, with no finings. I've only used Nottingham a few times, but that just seems to be magnetically attracted to the bottom of the keg - although I prefer the 05 taste.
