2nd attempt at a Wit

Brewing tommorow, how does this sound;

2800g Pilsner malt
2500g Flaked Wheat
500g Torrified Wheat

500g rice husks to help a 90 minute mash at 65c.
1.048 OG

some advice for which hop type to use as i have ; Challanger, Fuggle, E.K Golding, Pilgram, Northdown, Stiran Goldings.

I'm thinking maybe this;

Northdown 16g 90minutes
Northdown 8g 10minutes
This would give 17.5 IBU's

Also i have corriander and curuco orange for the last 10 minutes of the boil.

Yeast Danstar Munich ( I know i sould use a good liquid yeast but this is all i have).

Should work OK.

The Danstar Munich Wheat yeast will make it more clovey than a typical Belgian Wit. My closest version was with S-33, and I'm waiting to see what a Nottingham version come out like - I wanted almost no yeast character so I could taste the orange and coriander.

I plan to ferment at the lower end of the ideal temp for this yeast around 18c so hopefully I'll get a nice clean not overpowering taste from this Munich yeast. The last time i used this yeast it smelt just like Hoegaarden for the first couple of days until i accidentally let the FV rise up to 27C which totally ruined the batch!

I made a wit earlier in the year and was very pleased with it.

I don't think you need any late hops, just the bittering ones (any variety will do in my opinion) as Wits aren't really about hop aroma.
