I'm not sure what effect using such a large amount of Mild Malt would have, maybe a bit too cloying? I'd probably go no further than 70% Mild Malt/30% Pale Malt.

Munich Malt can make a nice addition used in conjuction with Pale and Mild malt.

You've gone for a fairly high ABV Mild (nothing wrong with that, historically Milds were alot stronger than today) Milds are a difficult beer to brew; its all about balance between maltiness and bitterness. 25 IBU is typical for the style, especially if the OG is fairly high.

I like the hop choice, very suitable for the style.

What colour is that coming out at? I guess colour isnt too important but usually they're considered a darker beer, 12 SRM or more.

I always use just mild ale malt as the base grain for my milds and do not find it cloying.

Honorable Member mild-three gallons
4 1/4 pounds mild ale malt
8 ounces crystal 60 malt
6 ounces flaked oats
4 ounces aromatic malt
2 ounces light chocolate malt
3/8 ounce goldings from my back yard for 45 minutes
1/8 ounce goldings from my back yard for 30 mintes
Wyeast 1318
O.G. mid 1.030s
F.G. low 1.010s
I'm just here for the beer.

I was thinking of having it as a mild winter ale hence the high abv.
Certain to use Nottingham and will probably mash at 65-66oC.
My best guess at colour would be 40 EBC +-5.

Many thanks for the feedback.

I may think about adding some crystal and cutting back on the mild.

I went with the following...

2000g of Maris Otter
2000g of Mild Ale Malt
450g of Wheat Malt
300g of Crystal
100g of Chocolate

Mashed at 66oC

25g of Challenger
10g of Fuggles
10g of Goldings

Mix of Fuggles and Goldings for the last 15mins 10g

Efficiency 80%

SG 1046

FG 1012

Colour is looking like about 50EBC.

One tasty pint, just had a trial and it is very nice, kind of blacksheepish.
I like the Mild Malt flavour I may up the quantity next time.

Hopefully it will get better with age.
