Post by WishboneBrewery » Thu Sep 10, 2009 8:30 pm

I've got a couple of kgs of Amber malt for a couple of experiments, it smells lovely... :)

Has anyone got a good recipe for a bit of Amber?? :)

RIS = Russian Imperial Stout?

Hmm, maybe not a stout. :)

My GOLD-SMIFF is in my new Glass jar and is looking mighty fine ( like to look through the clear section), just had a sample and Oh Yes, need to taste next to Crouch V's Brewers Gold to see what I like best, expect mine is a bit stronger.
I am in love at the moment with the US-05 and Brewers Gold Hops, I know there is not a lot of Amber but I'm sure it helps and yes, its a great smell on it's own.

GOLD-SMIFF:

3.5 KG Marris Otter
100gms Amber malt
200gms Torry Wheat
50gms White Sugar
Mash @ 64º

10gms @ 60 Brewers Gold 8.4%AA
10gms @ 15 Brewers Gold 8.4%AA
30gms @ FO Brewers Gold 8.4%AA

Yeast : Safale US-05

I made this version of Sam Smith's Nut Brown Ale recently, and it was really nice.

Anticipated SRM: 20.0
Anticipated IBU: 54.0

% Amount Name Origin Potential SRM
78.2 3.79 kg. Pale Malt(2-row) Great Britain 1.038 3
10.0 0.49 kg. Amber Malt Great Britain 1.032 35
10.4 0.51 kg. Crystal 120L Great Britain 1.033 120
1.4 0.07 kg. Chocolate Malt Great Britain 1.034 475

Potential represented as SG per pound per gallon.

Hops
Amount Name Alpha IBU Boil Time
90.00 g. Fuggle 4.40 47.6 90 min
20.00 g. Goldings - E.K. 5.80 6.5 15 min

Yeast - I made a 10 Gallon batch, and fermented 5 gallons with S04, and 5 gallons with some Wyeast 1469 (Timothy Taylor's) that I've been reusing since the beginning of the year. Although both yeasts produced a very nice beer, the beer fermented with 1469 was significantly better.

Personnally i`m not a big fan of Amber malt, i put 350g of it in a brew i did last year
and it turned out awefull, for my palette anyway, had to chuck it away, too much burnt taste.
But it maybe ok in a smaller quantity, but the recipe i was doing said 350g, way way too much.

Interesting...

I was considering these experiments, but Both those recipes above look good, maybe I'm overdoing it with the Amber??? :)

All three have exactly the same amounts and keeping the same hopping schedule and bitterness, the idea being for me to taste a new hop and a new malt in each brew.

My Thrapple recipe uses 300g of Amber. It's not overpowering at all along with the crystal and it's very tasty.

I'd say that your recipe with 27% of Amber malt will taste very similar to adding a smaller percentage of Chocolate malt. That's what i've found anyway in the past when i've used too much Amber. It might end up tasting like porter, and it could end up with quite a burnt taste. I'd definitely be inclined to cut it down a bit.

Oakham Ales - Hunky Dorey has about 300g of Amber in it and is a nice pint, the recipe is in Marc Ollorson's book which is worth getting.

I experimented with amber and caramalt back in June. Way too good to last long, in fact I put the last bottle in the fridge today having given far too much away :(

Caramber Gamble:

4400 cocktail malt (didn't have any MO)
100 amber
200 caramalt
100 crystal

20g admiral (7g FWH, 13g 90m)
35g fuggles (15m)
10g fuggles steep

Nottingham dry pitched

Ended up with 25.5 litres brew length OG 1042. FG 1009
I brew therefore I ... I .... forget

yeah... so Amber is a pretty intense flavour then?
I'd been looking through the Durden Park book and there are some pretty high percentages of Amber in there, maybe I should scale my brew length back to 6 Litres so I don't have something I don't want to drink... though I doubt I'd have a problem like that ;)

Its has so far been hard for me to give too much of my AG brews away, but my Extract Stouts have gone down a treat with friends etc
I'm holding back on the All Grain so far, but I should give some testers to my chief testers at work :)

Thanks a lot guys :)
