TREATING FRUIT FOR BEER

I am about to do a strawberry All Grain brew for my GF. When should I add the strawberries. Should they be pulped......cooked.....frozen....juiced etc. I have only used them stewed before. I'm looking for a strong strawberry flavour. What quantity should I aim for.

I'd like to try that that what malts + hops would you use though.

Thanks Chris, I guessed there would be a need to ensure the nasties were seen off. I pretty much agree with you in your taste for ale rather than fruity malt drinks. I am very partial to my "house bitter" and amarillo/cascade flavours for a change. My "guinness" turned out well even hopped with target!

As for the recipe. I will be using MO with a good quantity of wheat. Thinking of only lightly bittering hops, perhaps a small amount of challenger or some larger style hops. The brew will be split between strawberry and honey, both additions being in the secondary to maintain flavour and aroma..........unless anyone has a better idea
