My version Bitter and Twisted

Last time i tried to make a B&T it all went pete Tong and the batch was ruined. This time round i am going to do better, any comments more than welcome.

3.00 kg Lager Malt
0.50 kg Wheat Malt,
0.20 kg Caramel/Crystal Malt
1.00 oz Pearle [8.00 %] (90 min)
0.50 oz Hallertauer Hersbrucker [4.00 %] (60 min)
0.75 oz Hallertauer Hersbrucker [4.00 %] (5 min)
1.00 oz Styrian Goldings [5.40 %] (1 min)
1.00 items Whirlfloc Tablet (Boil 15.0 min) Misc
Yeast US-05
90 minute boil, aiming for a 18 deg fermentation temp
Est Original Gravity: 1.043 SG
Est Final Gravity: 1.011
Estimated Alcohol by Vol: 4.15 %
Bitterness: 43.0 IBU Calories: 187 cal/pint
Est Color: 5.5 SRM Color: Color

Last time i used US05 in a brew i achieved a FG of 1.008 so if this follows i expect a final ABV of around 4.5% which is fine by me. Going to go for a longer mash this time, thinking 90 minutes instead of 60. Should be on the go tomorrow.

recipe looks great to me Pants,

watch it with the Perle though, you can get quite a harsh bitterness from it.

Cheers Garth. I have no Challanger hops so was going to use them as a sub. Any other hop suggestions to replace perle which are replacing Challanger. Looking for the spicy note in B&T so not too bothered which hop supplies that note. If not i'll reduce volume to maybe 0.6oz Perle.

I will swap the Perle for Northdown and stick to the oz for 90mins for bitterness. I remember last time i used Perle it was quite dominant. Also got Chinook but will keep them for something else.

Made it today, day started poorly as my main brewing kettle sprung a leak as i was filling it. Luckily i had a back up so a quick holesaw through the side of it, fitting swap over and we were off and running! Don't know about you guys but when i open fresh hops my hands take over my mind and i end up putting in more than recipe calls for, this one was no different. A mate of mine who's Dad keeps bees gave me 2 dozen jars of honey. I fancy using some of it to prime the bottles when the time comes. Has anyone any experience in using honey as a priming sugar? I usually use 1 flat teaspoon of table sugar per bottle, any adivice much appreciated.

P.S Pitched at 22 deg expect main bulk of primary fermentation to be at around 18 deg.
P.P.S, S.G of 1.048. My brewhouse efficiency figures have been gargabe with this sack of lager malt(average 65%). I will be going back to Marris Otter once this sack is done. Seemed to hit around 80 to 85% when brewing with MO.
P.P.P.S Where do you get oatmeal for an oatmeal stout? Fancy making one. Thinking health shop or scots porridge oats. No idea about crush for oats.......

Bottled today at 1.008. I have taken 2 clear bottles as trials. One at ambient(15 deg) and the other in the fridge(4 deg). I will post photos later on the difference in settling of the yeast. P.S The sample from the hydro jar was great!

Edit, the difference in settling rates was slight(too slight to show on a photo). The 4 deg one was slightly clearer after 3 days but not by much and IMHO not worth the leccy it costs to run the fridge. Just throwing that one out there into the general learning pool of JBK.

Taste great, swear there is a slight honey flavour, got the spicy Hallertau in the mouth and the citrus hops is coming through big time in the nose. I'd buy pints of this no problem! :D

Cheers mate, one of those 'oh bloody hell, that's nice' moments! Tonight we are trying Belgian ale, Blonde and Spicy and My IPA(hello Old speckled Badger) :wink: . Got to be the best hobby ever, 25p a pint and 40p for the IPA! Hoping this mild piece of Exuberance will turn one of those kit/extract fence sitters to the dark side of AG. You know who you are......
