I FANCY SOMETHING SWEET!

I want to brew an All Grain ale which is light in colour with a fairly sweet taste and a good feel in the mouth. Maybe with a citrus, flowery cascade/amarillo type of flavour.
Any ideas on which grains will give the sweetness and perhaps a suggestion for a dried yeast, please.........oh and the hops!! Come to think of it a recipe would be good :lol: Anyone fancy brewing it for me, I can manage the drinking part :mrgreen:

....how about a Badgers Golden Champion clone, theres one on here somewhere that I do fancy a go at.

Thanks Harold...........I must brush up on my search skills :lol: I have probably missed out on the fresh elerflowers............it's the technique of retaining the sweetness I think I need to work on..............perhaps a high OG and a yeast which will not go too low?

If it was me i'd go with much lower ibus than the 37 in that recipe, i'd aim for around the 20 mark to let the sweetness come through a bit.
Windsor would be a good dried yeast for this especially if you are going to bottle (can take quite some time to settle in the keg).

Thanks Delboy, I am going to bottle and have actually bought Windsor with the brew in mind. I am thinking of mashing at the upper end of the range and perhaps using a higher proportion of crystal and maybe flaked maze in whatever I settle on. Good point on the lower IBU.

Seems like you are on the right track trucker, one word of caution though, if you use a low attenuating yeast (windsor), high mash temp, low IBUs and lots of crystal you could maybe end up with something super sweet and cloying (its the perfect storm so to speak).
I would think about using 2 or possibly three of these body/sweetness enhancing techniques but all four at the same time may be too much.

I'd mash at a normal temp (66-65C) go with a moderate/normal amount of crystal, low bitterness and ferment with windsor. See what it turns out like under those conditions and then tweak it to get the perfect brew.

Sounds logical. My one frustration with our hobby is the time it takes to repeat the methods to get where you want................thank the gods for this forum! I have just had an earl taste of both my strawberry and honey beers..........just about bottling time. I would have liked more of the intended flavours but there is a taste there :D
