What do you think of this for all grain 4

I am trying to produce a really hoppy session brew, what do you think?? I would take any advice kindly.

What yeast are you using and what is the volume of the brew?

Yep that would help, its a 5 gallon brew and so far I have used SO4 however, what would you suggest??

I think that if you are after a hoppy brew then you might want to switch out your bittering hop for maybe say Challenger or even Bullion. Using one of those is going to give you some more bitterness and then you still have the classic flavour of the Fuggles and East Kent.

I tend to like S-33 or Nottingham over the S-04. That is just my preference certainly nothing wrong with the S-04, I have also used that many times. I think that it is good to experiment with different yeasts.

I am very lucky in the fact that I have a great brew shop in my town so I can get pretty much what I want. I may also drop the pale malt down a bit, I really want something at about 4.5% or lower. Thanks for your suggestion
