Dark Star Original

Post by kairos » Sun Nov 22, 2009 4:18 pm

Dear All,

I am hoping to have a go at a Dark Star Original-type brew in the next fortnight and am trying to put a recipe together. I am trying to avoid the smokiness that you sometimes get in darker beers so am going light on the darker grains, but hopefully enough for colour. I am fairly new to putting my own recipes together so comments welcome.

The following is set for a 23ltr batch at 85%. I have dropped the OG a bit deliberately.

Plae Malt 3.10K
Crystal .18K
Black Malt .10K
Roasted Barley .10K

Goldings 50g 90mins
Cascade 20g 90mins
Cascade 20g 10mins
Cascade 20g 0mins

Est OG: 1040

From the tasting notes on the website:

Maris Otter
Crystal
Choc
East Kent Goldings - mentioning late addition of whole cones (as opposed to pellets I guess)

How about this:

Ingredients
@62% efficiency
Amount Item Type % or IBU
4.78 kg Maris Otter (5.9 EBC) Grain 93.00 %
0.26 kg Caramel/Crystal Malt - 60L (120.0 EBC) Grain 5.00 %
0.10 kg Chocolate Malt (Pale) (500.0 EBC) Grain 2.00 %
55.00 gm Goldings, East Kent [4.60 %] (90 min) Hops 24.8 IBU
20.00 gm Goldings, East Kent [4.60 %] (10 min) Hops 3.1 IBU
20.00 gm Goldings, East Kent [4.60 %] (5 min) Hops 1.7 IBU
20.00 gm Goldings, East Kent [4.60 %] (30 min@80°C) (Aroma Hop-Steep) Hops -
2 Pkgs SafAle English Ale (DCL Yeast #S-04) Yeast-Ale

Beer Profile
Est Original Gravity: 1.042 SG
Est Final Gravity: 1.011 SG
Estimated Alcohol by Vol: 3.98 %
Bitterness: 29.5 IBU
Est Color: 21.9 EBC

Dunno just thinking aloud. I know they use Notts, S04, and US05 in the brewery.
