Marble Dobber

Last Saturday I had what was probably the finest pale ale I've ever tasted, Dobber by the Marble Brewery. Needless to say I'd like to clone it. :D However my problem is that I'm crap at describing tastes, so I find it difficult to work out what characters I need to impart in a beer. I would describe it as hoppy and fruity, but that's about as far as I'd go. Is there anyone who has drunk this particular beer can help me put together a recipe (all-grain)? I expect I'd need to know the approximate grain bill (all / mostly pale malt judging from the colour), hops and yeast.

I've never had the beer, but from reading about it, I'd use 95% Pale Ale Malt with maybe 5% carapils or light crystal to a starting gravity of 1.060. Hop it with Amarillo and Simcoe to around 35-40 IBU's. Dry hop with 14g of each hop for one week. For yeast, I'd go with UK-05, or Nottingham, if you must.

Amarillo and Simcoe would certainly give the flavours described in the tasting notes links. Would you suggest 50/50 for both hops for 90 minutes, and for the last 10 minutes?

I think that's a pretty good recipe. I would definitely drop hop it as well.

Actually, looking at this again I think I'll go with Cascade hops in place of the Amarillo. Their flavour profiles look similar, but I already have some Cascade on hand. I'll still go with Simcoe for the pine flavour that is regularly reported in the tasting notes. I might also load up the last 10 minutes of hops to tip the balance towards flavours rather than bitterness.

I prefer Amarillo, they're more intense, but if you've already got Cascades, go for it. It's going to be good either way.

It just appeared in my local bottle shop for the first time (Saint Louis, Missouri, USA, so a long way from home). Needless to say, I'm very excited. It cost $9 for the single bottle(!), more than I usually like to pay for a six-pack but I gladly paid it in order to harvest their yeast.

This is all I've gathered, I'm hoping you guys can help me fill-in some blanks:

Marble Dobber IPA
Marble Brewery - Manchester, England
OG: ?
FG: ?
ABV: 5.9%
IBU: ?
Colour: hazy deep amber
Grainbill: ? (someone said 100% Maris Otter, but that's impossible given the dark colour, unless they use Brewer's Caramel or Dark Invert Syrup, which also seems unlikely in this case because elsewhere the brewers boast about all-grain)
Hops: New Zealand Nelson Sauvin and Green Bullet (what about amounts and times?)
Yeast: bottle-conditioned with proprietary primary strain, originally derived of historic Gales brewery strain

I love the stuff, I think it's pretty much the perfect beer. I havn't had one in a whle and I've just fornd a few references to it been disscontinued :shock: Anyone know if this is true? I emailed the brewery to check.
Seymour I found this reference to it on the internet (so it must be true)

It says biscuit on the bottle. Makes sense to me. Agreed this is the finest beer I've tried in years.

Definitely Nelson Sauvin. It also mentions New Zealand hops on the bottle.
