im planning on making this on sunday

21's

23 litres O.G: 1.052 EBU:31 EBC:11

Pale malt 4221g
Caramalt 321g
Torrifed wheat 121g
Sugar 221g

Armarillo 21g - 60 min
Armarillo 21g - 10 min
Armarillo 21g - 5 min
Armarillo 21g - 1 min

i was wondering what i could add to the grain bill to give something a little different from my usuall pale ales which pretty much have the same grain bill excluding the sugar? i have quite a few other speciality malts at the moment such as:

mild
amber
caramunich
roasted
black
munich
vienna
rye
chocolate
flaked barley
plus the usuall crystals, wheat ect and possible a few more

im not looking for something that will stand out loads but would just lie to add a little some thing different.

cheers

Try this, pull the crystal malt out and put in just a little amber malt. Dogfish Head does this with their 60 minute IPA and I really like it. You will find that your beer is dryer but it will also have sort of a toasty edge to it which I really like myself (also, it's a little different). Actually, you might also want to pull the sugar since the sugar also tends to dry the beer, without the crystal you may not need it. What you have there is basicly an APA and over here we are not real big on putting sugar in beer (I really don't know why though as it can add quite a bit if done correctly). Anyhow, good luck with it, should be good, amarillo is a great hop.
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

I had a bitter recipe that didn't come out quite right until I put in a bit of victory malt. I think that a touch of lightly roasted malt would give you what you want.
I'm just here for the beer.

ok thanks for the sugestions chaps.

i think a slightly toasted, roasty flavour is what im looking for as i do like that in my beers. ive decided to add 221g amber malt to the grist.

happy brewing :D
