GRANDADS AG 1974 RECIPE

Hi everyone,

I'm going to start my first ever brew this week hopefully. its going to be the extract recipe for esb using the step by step method from Daab's post with pics. 8)

Although I'm new to brewing my dad and grandad have had some great success with all grain method brews. Sadly my GD died in 1980 when i was just 5 so i never got to try his ale. :cry:

The good news is that he wrote 2 books about his brewing exploits (though i can only find the 2nd) covering a total of 103 brews.
I thought it might be interesting to the brewing community if i copied a recipe or 2 from his book....so here goes!

BREW NO 80 TUESDAY OCTOBER 15TH 1974.
GROSS 5 AND 3/4 GALLON - NET BOTTLED 5 AND 1/2 GALLON

INGREDIENTS
6LB PALE MALT 180.0
1/2 LB CRYSTAL MALT 15.0
1/4 LB FLAKED MAIZE 7.5
1/4 LB FLAKED BARLEY 7.5
1LB SUGAR 37.0
-------
FOR 5&3/4 GALL 247.0
FOR 1 GALL 42.8

ACTUAL SG ATTAINED 38.0
EFFICIENCY 90%

1 HEAPED TEASPOON GYPSUM
2&1/2 OZS GOLDINGS HOPS
DUTCH ALL PURPOSE YEAST
1 GRAM IRISH MOSS BOILED WITH HOPS
MIXED UP DRY BEER FININGS
1 PKT OF GORDON BREW HEADING POWDER

METHOD:-
3 GALL OF WATER BOILED, GYPSUM ADDED WHEN BOILING.
WATER LEFT TO COOL TO 160F
GRIST, IN COTTON BAG IN PERFORATED INSERT CONTAINER, WELL STIRRED IN.
IMMERSION HEATER + THERMOSTAT COUPLED UP+ MASH LEFT AT 11.30PM WITH TEMP AT 140F. TEMP UPTO 150F AT 12AM

WED OCT 16TH
AFTER MASHING ALL NIGHT WORT RUN OFF AT 9.30 AM. GRAINS SWILLED WITHHOT WATER. THE WORT RETURNED TO CLEANED OUT BURCO AND BOILED WITH THE HOPS AND IRISH MOSS FOR 1&1/2 HRS. LEFT TO SETTLE THEN RUN OFF AND FILTERED INTO PLASTIC TUB. COOLED TO 70F AND YEAST AS A STARTER PITCHED AT 9PM. ONLY 90% EFFICIENCY OBTAINED IS APPARENTLY DUE TO GRIST BEING GROUND TOO FINE RESULTING IN POOR SWILLING OF THE GRAINS.

THURS OCT 17TH 10.30AM
BEAUTIFUL CLOSE KNIT CREAMY HEAD OF FOAM ON TOP OF BEER. EVENING- BROWN SCUM REMOVED.

FRID OCT 18TH
SCUM AGAIN REMOVED + BEER GENTLY ROUSED

SAT OCT 19TH
FERMENT CEASED. BEER RACKED OFF SEDIMENT. FININGS STIRRED WELL IN SNAP SEAL LID FITTED + HOLES PLUGGED WITH COTTON WOOL. LEFT TO REST AND SETTLE. 1/2 PT BOTTLE SAVED WHILST RACKING.

TUES OCT 22
BEER RACKED OFF AND THE 1/2PT SAVED FROM FIRST RACKING STIRRED IN TOGETHER WITH 5OZ OF SUGAR BOILED WITH WATER TO MAKE INTO SYRUP AND A PACKET OF GORDON BREW MIXED UP HEADING POWDER BOTTLED INTO 33 & 1/2 BOTTLES

WED NOV 6TH
BEER HAS A SLIGHT HAZE. NICE TASTED. GOOD HEAD RETENTION

TUES NOV 12TH
BETTER CLARITY NOW BUT NOT 100% BUT TASTE, STRENGTH & HEAD RETENTION IS ABSOLUTELY SUPERB.

SEEMS LIKE HE THOUGHT A LOT ABOUT THIS PARTICULAR BREW.

If anybody tries out this recipe please post your results as i would be very interested. i hope to do this and his many other recipes myself someday, but need to gain some experience (and some equipment) first.

if this proves to be a popular thread i will post more recipes in the future!!

I hope you are keeping good records of your own brewing to pass on to your grandkids. Tradition is good.

Hi kay jay looks like an interesting recipe, you should brew it yourself first :) i shall put it on my list of ones to do thanks very much.
I dont know where you get your supplies from but Spitting Feathers on Tong Moor Road, has all the hardware and quite a bit of stuff for extract brewers the owner Steve is very helpfull if he hasnt got it he will get it for you good luck with the brewing you wont look back

That is great mate. Hope you get to brew that and loads more from the book. Maybe one close to around your birth?

That's cool. He was well into it! Stories I hear from the 70s are sir it all up, add loads of sugar and stick it in the airing cupboard.

Be pretty special to try his ale after all these years. :wink:

Scum? Isn't that part of the krausen?

hi all,
thanks for all the positive feedback! i will post more from grandads journal in the future, but a bit busy ironing out all forseeable hiccups for my own forthcoming first brew.

pas8280 - thanks for the heads up about spitting feathers. i went yesterday and purchased everything i need for my first extract brew.

prolix - unfortunately the beer brewed on my birthday was not one of gd's more successful brews, i may still try it though, but with a little refining

dave-o - krausen? i have absolutely no idea what this is. i myself am new to brewing. the recipe and method printed above is simply a word for word copy of the entries in my gd;s brew journal. whether he was wrong or right to skim the scum off is something i couldn't possibly comment on other than to say it was what he did.

thanks again guys, and look out for future recipe posts from the 70's

I'm not saying he was wrong. It seems he had plenty of experience, so i was interested to know if anyone else has heard of this.

By "krausen" i mean the foamy yeast head that you get floating on top during fermentation.

hi everyone

i've just inputted gd's recipe into beer engine, to see what kind of beer it might produce. here are the results.

1.047 O.G
18 EBU COLOUR
BITTER 45 EBU

ALCOHOL WAS AN ASTONISHING 5.1 PERCENT ABV.

FOR A MAN ABOUT 70,QUITE ILL IN THOSE YEARS TO BE BREWING 6 GALLONS A FORTNIGHT OF ALE THIS STRENGTH IS REALLY QUITE INSPIRING.

I GUESS HE HAD A REAL PASSION FOR IT

well good luck with gd's brew it sounds good to me
the scum he is on about is the waste deposits of the
yeast. i have to say it sound great and im going to try
a few gallons for myself . will keep you posted
on how it goes .
