Wittmans Revenge

Post by pas8280 » Wed Mar 03, 2010 9:27 pm

Planning this this for the weekend as the start of a search for a summer lemony recipe
Still only 16Litre run so

2500g Maris Otter
300g Munch Malt
75g Torrified Wheat
Using Challenger Hops 32g at 30mins and 16g at 10 mins

This according to Beer Engine should give me OG 1046 FV 1011 giving ABV 4.5 % with EBU 35 and EBC 10
Trying a few different things with this, Munich malt (because i have it) Challenger because i am led to believe it imparts a distinctive lemony flavour and i am trying later hopping full 90 min boil but hops in at 30 min to go and 10 mins to go. I think the extra ingredients to add further lemon flavour will wait till version two.
What do you think guys ? Will the later hops times work or should i keep with my standard 90 mins and 10 mins

Personally i'd use more Munich. It's a lovely malt, and you want to be able to taste it. I'd use up to 40% without blinking.

To be honest Dave-o i was planning on dropping down a little on the Munich as i am adding Cascade to the Hop scedule looking for a lemony taste and i was thinking that the Munich might put the taste's into conflict. Then have a big Malty brew with the next brew using one of the other hops that i seem to be ammassing without trying any suggestions would be greatly appreciated. :)

That's fair enough.

Do you mind me asking: why use any Munich at all then?

Dave-o it was really an initial thought, i keep looking at the bag of it when i go in the kitchen and thought right i will use it in my next brew, then i had the thought of a summer ale with a lemony taste hence the Challenger and from my other post the idea of Cascade came out so i had a second thought about the Munich and i may well drop it all together and wait till the next brew, Malty Chocolate has a grasp of my imagination at the moment :) Basically i feel a lot like a kid in a sweet shop with a pound coin in my hand far too many choices to pick from and easily swayed :D

Well i've used citrussy late hops (smallish quantities) in a heavily munich ale, and it is nice, so i don't see why it would be a problem the other way round.

I wonder if Vienna might be more suitable though? Although i guess you already have the Munich, not Vienna, so this is probably pointless.

Your choc/munich will be lovely though, going from my experience.

Liberty, because they're what i had and they're closely related to Hallertauer. Perhaps not 100% authentic, but not far off.
