ive made up a kolsch starter which i planned on using to make a kolsch on monday. thing is i wont have the lager malt by then so wont be able to make the recipe i wanted.
what i was thinking of doing is making a blonde beer instead using the kolsch yeast and then when i make the kolsch either rack straight on top of the left over yeast or harvesting it and using at a later date.
so how does this sound? it says in the description of this yeast that it is good for light beers such as blonde ales so i think it might be ok.what do you chaps think?
here is my blonde ale recipe
24 litres(just because i can)
EBU 24
EBC 10
4.4 kg Pale
100 g crystal light ( not sure waether or not i should take this out)?
200 g torri wheat
40 g crystal 4.9% - 90 min
10 g crystal - 20 min
10 g crystal -20 @ 80 c or dry hop
how does that sound for a blonde?

That sounds good. I like challenger in golden ales aswell.
Just my humble opinion, but I personally would leave the crystal out. I also use wheat malt as opposed to torrified wheat a lot of the time these days (purely because I buy wheat malt in bulk for weizen brewing).

yer i think i will leave the crystal malt out so as to get it as pale/nlonde as possible.
