Was planning on brewing a wheat beer this weekend after an old pack of WYeast 3944 turned out to still be viable. Was wondering about using Simcoe with the following recipe, thoughts?

45% Wheat Malt
45%Lager Malt
10% Flaked Wheat

Simcoe @ 90 mins to give about 22 IBU's
Coriander Seeds crushed @ 15 mins
Dried orange peel @ 15 mins

Mash @ 66ºC
WYeast 3944

Never used Simcoe before, any idea if it will work?

Never used Simcoe before, all I know about them is they're usually quite high AAs and more of a citrusy/piney flavour. Maybe a bit too harsh for a beer where the coriander/orange peel will need to find balance with malt and hops. More of a pale ale thing.

Maybe stick to one of the noble hops (Hallertau, Saaz) which will be more at home in a wheat beer. I'd also notch the IBUs down to the 15-20AA mark, especially as you are including the coriander and orange peel addition.
