Having drunk a couple of really nice commercial Dunkel Weizens recently I fancy having a go on my next leave, about 5 weeks away. I've come up with this. I'd appreciate it if anyone who's got a bit of experience brewing one to have a quick look at my recipe and see what you think.
All Grain 19 litres.
Amount Item % or IBU
2.45 kg Wheat Malt, 65.68 %
1.20 kg Munich Malt 32.17 %
0.08 kg Carafa III ( 2.14 %
15.00 gm Pearle [8.00 %] (60 min) 15.8 IBU
1 Pkgs Hefeweizen Ale (White Labs #WLP300)
Estimated Original Gravity: 1.047 SG
Estimated Final Gravity: 1.012 SG
Estimated Color: 27.0 EBC
Bitterness: 15.8 IBU

Looks great.
Only thing i would say is you must be getting great efficiency to get a 1.048 OG from 3.73kg of grain. Is that definitely right? I normally aim for more like 4.5-5kg of grain in a weizen. Perhaps you are more efficient though!

Yeah, looks awesome. If you can get hold of some 'dark wheat', try that. Hard to get a hold of though. Your formulation will be good though. Agree the grain looks a little low.

I am drinking a Dunkel Weizen right now that I made pretty much using dark malted wheat, Munich malt and a little carafa for coloring (70/30 wheat to malted barley). I also did a double decoction which I think helps alot especially with wheat beers. The beer is ok and it got into the second round of a very large competition but I really think it needed a little crystal malt to sweeten it up just a little. For whatever reason, I also did not get the level of esters/phenols I was hoping for, the beer would be much better with more bananna/bubble gum and clove. Oh, well, I will for sure try it again, good luck with your efforts.

Cheers, it's going to be about six weeks or so before I get the opportunity to brew again so I have plenty of time to work out the finer details of a recipie.
