I'll be very interested how your Mash goes on the 10%, do you Fly or Batch sparge, I think I need a couple of things to get the job sorted... a refractometer and to start Fly Sparging!

Technically its just a Mad-ass American Pale really :D

Batch sparge.

I have made two 9.5%+ beers abv so I think my technique will hold up fine. I am going to loose an ungodly amount of wort to those hops though so that will probably hit my effiecency.

I'm sure your technique is a ok.

I think mixing the mash up after you add the mash out and sparge water is important with big beers when batch sparging.

What sorts of effiecnies are you getting?

I did give it one heck of a good mix after adding the sparge water.
Normally on a regular brew I get 78-82% with 2 Batch sparges.
The Naked Imperial Stout after the 2 batch sparges was more like 40%, though after a 3rd sparge which gave me 10L of 1020 wort I ended up going 3 points over my predicted OG 1090 to 1093 in the FV.

I'd have preferred all the sugars to have come out without the extra volume, the longer boil wasn't a problem to get back to a sensible amount in the copper just a bit time consuming.

Oh, just out of interest, how much sugar have you used in your larger beers?? I suppose it makes sense to mash a normal amount of malt then bump it up with some sugar in the copper. :)

Depends on what type. If its a Belgian then the candi sugar was something like 15% normally 5-8% I think. The reason for the sugars is to make sure it doesn't end up too sweet. I think if you were doing a RIS or a Barley Wine(in particular) you could get away with no sugar being added because they are so full bodied.

Weirdly enough I seem to get lower effiecenys with dark beers. Might be something to do with the mash pH being dropped by all the dark grains. I dont really check the pH just use grahams water treatment calculator.

yeah could be, everytime I check my pH its too close to bother about (whatever I do with the water treatments) :) I didn't bother checking my pH this time round.

I might try that the next time I make a big dark beer.

Bought some marbles today to weigh down the dry hops for this guy.

Going to buy a splatter guard to wrap round my strainer so I dont end up with that load of hops blocking up my strainer. Works out theres about 9g of late/dry hops per pint. Which is a new record for me, might even drop the volume to end up with 10g per pint. :D

Indeed. Will see how my strainer copes with that level of hoppage. :D.

Will be the second brew day with my wee pump. Going to build a stand later on tonight.

More like a bit of wood the pump is screwed to so it can sit on a stool. :D.
