The hopping schedule looks like my cup of tea anyway.
Have to say I can never really get my head around adding carapils to a recipe to add body and then sugar to reduce it again though

I have often wondered how much wort is lost to all the hop material, are you set up to handle that much stuff in the bottom of your brew kettle? I am pretty sure that I would get into a problem the way my system is currently set up. I have tried the commerical product a couple of times and frankly, I am not man enough for all that bitterness. It should be fun however from a technical standpoint to see how close you can come to Vinnie's version. Do you plan to keg the stuff or are you going the bottle route? I am always afraid to keg stuff with that high a starting gravity, it's way too easy to get into trouble going into the garage just a little too often (and my wife is not shy when it comes to telling me about it).

I'd put the hops in mesh bags. Both during the boil and dry hopping.

Almost any volume. I'd put the big ones in the socks. The 3.5oz addition and the 2.5oz addition. The other 2.75oz I'd just add to the kettle.

I think so. When it's on, it's ON! Ridiculously drinkable. It drinks nowhere near an 8% abv. beer.

Sounds great. I doubt my next hoppy creation will be too drinkable. Wont be heavy but i dont want to forget its 10% and sink 4 bottles of it on a school night.

Let me know how it turns out... As I've just been researching this on some of the US forums. Never tried it, but definitely sounds like my cup of tea.
