It's not easy to get good ingredients here, so I'm going to order enough gear for my 1st 3 AG's

Scarey as hell, but I know the styles I'm looking for and think the recipe's will work.
Please read through them and tell me what you think!

Dark side - That's a strong stout! Is it meant to be? No need for the crystal IMO. Other than that, looks pretty classic and should be great.

Dark wheat - I think that with that dark crystal it won't taste like a traditional dunkel, but maybe that's not what you're after. If you are, maybe use some carafa instead. If not, go for it.

Big Switch - looks great.


You haven't mentioned what yeasts you are using.

Firstly, I should stress my limited experience in this; however, I'd say the stout looks fine and I'd maybe keep the crystal though I'm not sure it's an issue either way. I wonder if the wheat would be better of with pale malt rather than munich? Just a feeling and I suspect others more knowledgable than I will be able to advise better. Big Switch, agreed looks fine, though personally I'd use either Target or challenger for bittering; no need to over complicate and I doubt that you'd get any sense of the differences between either from a long boil.

I think you may have got the eighth decimal place wrong on the last IBU number. :lol:

Dave, yeah I know :wink: bigger and better

Not really sure what I'm after, thats why I was looking for feedback, based loosly on a recipe I saw somewhere.

Big Switch is based on what I could find out about Fullers ESB only hops are a little out I know

For yeast I was going to keep it simple with s-04 for the stout and ale and wb-06 for the other?

It's just I see both are used in Fullers ESB and I really like that, I wonder though?

I have to agree, I've seen this a lot with BE, it doesn't round up the final figure.

ESB uses Target alone for bittering. Challenger and Northdown are the late hops.

I've read 35 IBU's and that was what I was going for.
