Centennial, Cascade, Chinook

I want to make a massively hoppy APA and after some research have found that Centennial, Cascade and Chinook are popular hops of choice. I've brewed with cascade many times and did consider using those only. However, I've read that Centennial are actually stronger. :shock: I've also heard that Chinook are great for bittering APAs.

Can anyone shed some light on this?

Chinook are great bittering and dry hops. I've found this years Centennial maybe not as potent as previous years, still good though. I would recommend Simcoe on top of the ones you've got, and Amarillo.

People often compare cascade and amarrilo. My findings are that if you accept they are similar, then amarrilo have more of whatever makes them similar :roll: ...one of my favourite hops :D

Cheers lads. Chinook and Amarillo are defs added to the recipe! I reckon I'll steep the Amarillo with Cascade. Is Amarillo a good steeping hop? I know cascade is!

Here's what I've come up with. Jeeze it's making my mouth water even thinking about it!

American Pale Ale
10-A American Pale Ale

Size: 25.0 L
Efficiency: 80.0%
Attenuation: 78.0%

Original Gravity: 1.052 (1.045 - 1.060)
Terminal Gravity: 1.011 (1.010 - 1.015)
Color: 5.99 (5.0 - 14.0)
Alcohol: 5.27% (4.5% - 6.2%)
Bitterness: 40.3 (30.0 - 45.0)

Ingredients:
5.0 kg Maris Otter Pale Ale Malt - TTS
500 g CaraMalt
25.0 g Chinook (12.7%) - added during boil, boiled 90 min
25.0 g Amarillo (9.4%) - added during boil, boiled 5 min
25.0 g Cascade (7.6%) - added during boil, boiled 5 min
35.0 g Amarillo (9.4%) - steeped after boil
35.0 g Cascade (7.6%) - steeped after boil

I think you would be better to up the amount of hops to the same sort of EBU but put them in later, as in from 20 mins or so. It works a treat, smooth bitterness and massive hop flavour.

Floyd, I agree with Rob, reduce the first boil hops, in fact reduce it from 90 mins to 60 mins, really haven't found any benefits in the extra boil time - some brews are now down at 45 - 60 mins. With the bargain prices of hops nowadays & preferred bittering from later hops it works for me.

Recently did single hop brews including centennial & Chinook, small amount of initial first boil hops, followed by 20, 15, 5 min additions and steeping at least 30gms. All turned out really well, the Chinook was 90 IBU's but really something.

You’re brewing some good beers; hope this one is another winner - and if you haven't yet tried it - do a nelson sauvin single hop brew. The fuggles and first gold is good, but nelson is another dimension to beer as we know it!
