recipe suggestions please

I've now done 2 basic AG brews and want to something a little bit different. i would like a brew that was rich and dark, but not so much as a dark stout or guinness. I have plenty of MO and crystal malt, Goldings, Fuggles and First Gold hops. We have a decent brew shop nearby so can get almost any ingredients. As i have said this will be my third brew so an idiots guide would be welcome along with the recipe. Brew size 40 pints. Many thx Ian

I'm at about the same stage as you having completed 3 AG brews, Old Hooky, Summer Lightning & Tribute. Although a couple of these recipes, Old Hooky & Tribute were put together by myself by using other recipes and researching brewery websites & books etc and turned out well this next brew will be one totally of my own making.

Pale Malt - 5 EBC - 5000 grams
Munich Malt - 17 EBC - 500 grams
Cara Amber - 70 EBC - 250 grams
Crystal Malt - 120 EBC - 250 grams
Torrefied Wheat - 2.75 EBC - 200 grams
Chocolate Malt - 940 EBC - 125 grams

Challenger - 6.4 % Alpha - 60 mins - 45 grams - 24 EBU
Golding - 4.6 % Alpha - 20 mins - 25 grams - 6 EBU
Progress - 5.6 % Alpha - 20 mins - 20 grams - 6 EBU
Golding - 4.6 % Alpha - 5 mins - 20 grams - 2 EBU
Progress - 5.6 % Alpha - 5 mins - 20 grams - 2 EBU

Brew Length: 25 Litres
Original Gravity: 1.056 OG
Final Gravity: 1.014 FG
Alcohol Content: 5.5% ABV
Bitterness: 40 EBU
Colour: 60 EBC
Dry Yeast: Danstar Nottingham
