Now Ive got beer engine up and running Im having a look at recipies. I dont really know what I'm doing yet and wondered if this sounds stupid of if it may be a good place to start all grain:

bigdave it looks fine to me quite simple i take it the wheat malt is there for head retention etc, the only thing i would be cautious about is the estimated efficiency with the grain bill as it is giving a 5.5 % ABV you could end up with a 6% + brew i erred on caution and plumbed for a 4.5 % which ended up nearer 5% due to a half decent efficiency. Either way im sure it will be a decent pint then then you will have no way back and unlimed beers and flavours to experience

Looks fine, Dave. I don't bother with brewing software. Your grain bill is fairly strong. Have a look at the recipes thread and you'll see that 4 to 5 kg of grain is the norm for a standard beer. For a first brew I'd recommend something simple, you've plenty of time to tinker after that.

Looks fine - though I'd perhaps put the fuggles as bittering hops and use the syrians later in the boil - maybe 35 IBU from the Fuggles, then 20g Styrians at 15min and 20g styrians at 1min - both will give some good aroma and flavour as you force the beer out from your beer engine.

Further the coatesg; open your hops and smell each packet -- which do you want your beer to smell of? Choose that for the aroma. Either way you'll end up with a nice flavour from that combination (styrian+fuggle)
As for the grain bill, stick with it. Nothing wrong with a 6% beer
And there's just as good a chance that your efficiency will be _below_ 75% than above, especially if you're still learning to use your equipment.
So I say keep your grain bill as it is but pay attention to the O.G. so you know what efficiency you got.

In true bigdave fashion, this has all changed AGAIN!!
I decided that in the long run it'd be beneficial to do some really basic single hop brews, to find out hop the different hops affect the beer...
With this in mind Ive ordered the grains & hops for the first 2 brews as follows:
AG#1
5000g MO
500g Wheat
60g Fuggle 90min
40g Fuggle 60min
@ 75% efficiency = 5% & 47 EBU
AG#2
5000g MO
500g Wheat
60g Styrian Goldings 90min
40g Styrian Golding 60min
@ 75% efficiency = 5% & 43 EBU
AG#1 is penciled in for 24th Sept, there's no going back now!

At last man, I thought you were just going to make brewing equipment as a hobby.
My 1st was a single hop stout and it was/is a super pint and a hassle free brewday

Which way round are you working your hop additions?
Is 90mins your Full Boil Duration hops or Your End-Of-Boil hops? (The differences between a 1 hour Total boil & a 1 1/2 hour total boil are pretty negligible)
eg:

So to get the best from the 2nd addition I should consider putting the hops in at boiler off while the IC is running? Would I be right in thinking that that would lower the EBU but give a greater aroma?

Simple recipes are my fave. You might want to chuck in a few hops after flame-out but other that that those recipes look spot on to me.
What sort of wheat are you using? Wheat malt? Torrified?

lower EBU and more Flavour & Aroma, you Can just bung them in for 20-30mins before you start cooling.
Or Cool to 80c and get even more Aroma from your hops, again steep for 20-30mins then finish cooling

Sorry, it's wheat malt...
A 'boiler off' addition seems like a good way to get a better idea of the flavours and aromas each hop has to offer.
