Might not need the Perle hops to bitter with just do a mix of Herbrucker & NS

Just from a selfish point of view i would recommend the Nelson Sauvin brew, only because i have enough NS left to use your recipe if it turns out a cracker and i must say thats the way it looks :D

;)
Hmm do you think 45 EBU is too bitter for a 3.9%, probably not really.
I am swaying toward the NS brew just because I think I need to put more thought into the Rauchmalt brew.

I went for the Nelson...

Anyone have any thoughts on the Rauchmalt recipe, I feel I should put a bit more thought into it...

I find the Rauchmalt in the homebrew trade here isn't really all that smoky. You can easily put as much of it in as you want without it being too smoky. 100% and it still won't approach the smokiness of Schlenkerla.

Ideally I want some peated malt for a Smokey Stout, but after chewing on a bit of Rauchmalt I can see it is pretty mellow stuff and would work in a fairly light coloured beer.
