Cidar still a bit 'tart'
ok, ive pressed loads and loads of apples to get 40 pints of juice, the apples were a mixure of different types possibly 3 different kinds. ive added 3 litres of apple juice, you know the cartens of juice you buy in tescos'. ive added 3/4 kg of sugar and the ammount of yeast reccomended for the 40 pints of juice. Fermentation was very good and the fermentation is now nearly over. Ive tasted the cidar in the brewing barrel but i find its a little tart, not sour. What can i do to make the flavour either sweet or to take the tart taste away, or will this go in time through age in the locked barrel.
