Ding's Random Hop Ale

Just finishing the boil now on a Random Hop Ale. This is using the wild hops we picked a couple of weeks ago and some of my home grown Cascade. The recipe is a fairly normal 4.2% bitter, although I may have to call it a "light mild" if the hopping turns out to be a bit on the low side.... :shock:

Ding's Random Hop Ale

38 litres

6.5 kg. Pale Malt Maris Otter
0.5 kg. Munich Malt
0.4 kg. Crystal Malt
0.2 kg. Torrified Wheat

125 g. Wild Hops 90 min
25 g. Wild Hops 10 min
60 g. Cascade (fresh) 0 min

OG: 1.044
IBU: ???? Maybe about 40. Or 20. Or something....

Ding's a very good friend of mine. Not to be confused with Dong, who is his evil twin and lifelong nemesis.

As mentioned in another post, my efficiency rocketed on this one, due to my new water treatment think, so the OG was 1.050 and the ABV will be closer to 5%. Yeasties were off and running by late afternoon. I sampled the unfermented wort but I could not really tell much about the hopping levels. Patience required. I've never been good at patience...

At 5% its not a light Mild any more.
I've been finding that doing the Liquor treatment properly makes a very noticeable difference to Mash Efficiency :)

Just kegged this one, after just 6 days in the FV. It hit an FG of 1.012 on day 4, it's clear as a bell, amazing hop aroma (Cascade) and bitterness level is just right (lucky boingy). In a perfect world I would leave it in the FV for another couple of days but we have a busy few days coming up.

So it turns out you don't need all that complicated AA and IBU stuff. You can just throw "some hops" in and it all works out (although this technique may require a certain amount of luck...).

I think I'll be drinking this one young. :wink:

Rough arse brewing...
It would be interesting to do a few brews 'by eye' and roughly jug in some amounts of malt and just use the 'Brewers Handfulls' as a hop guide :)

The first cornie of this is now on tap. It might just be the random nature of it but I think it might be one of my favourites of recent brews. Maybe I should rename it "Unreproducible"... :D

Good man. I'll be 'testing' my wild hop brews tonight. This has given me significant encouragement! Only problem is, I caved in and added S-04 as the Burton yeast looked like it was struggling.
