chocolate wheat and crystal wheat malts

Post by Rookie » Sun Jan 23, 2011 5:23 pm

Has anyone ever used either or both of these?
I have enough of both to make a nice brown ale or lager. I am still debating with myself about using these to make a munich dunkle or a bock or maybe a dunkle wheat, any thoughts?
I'm just here for the beer.

I think the choc wheat will be too roasty for a Dunkel. You want Carafa for that really.

I was only going to use a small amount for color.

I'm fairly sure I used some chocolate wheat (maybe 200g) in a dunkelweiss that turned out well, I'll try and find the recipe.

Here you go, I thought it turned out pretty well and most people who tried it thought it was one of my better efforts at the time. You can certainly taste the chocolate wheat (the crystal balances the extra bitterness to some extent) but IMO you should do in a dunkelweiss, Erdinger Dunkel doesn't taste much like their hefe for example, YMMV obviously

Actual FG 1016

Bitterness 17 IBU
Colour 19 lov/ ~ 40 EBC

3kg dark wheat
2kg lager malt
250g chocolate wheat
200g crystal wheat

30g Mount Hood 90 mins

yeast: WLP 351 Bavarian Wheat Yeast

I fermented fairly cool, Christmas 2009

If you do brew a dark wheat beer leave *plenty* of headspace as they really like to climb out of the fermenter. Hope it goes well.

I've been leaning towards the dunklewhheat idea and this looks good.
