Graham Wheeler's Wadworths JCB Recipe

In Graham's BYOBRA, the above recipe states:

'Bring approximately 1 litre of water to the boil and turn off the heat. Infuse around 10 grammes of hops in this hot water and leave to stand for an hour or so, while the main boil is taking place. Add this infusion, water and all, to the copper just before emptying.'

The hop schedule for 25 litres is:

Start of Boil

33g Fuggles
33g Goldings

Last 10 Minutes of Boil

11g Fuggles
11g Goldings

I presume the hop tea is either the fuggles or goldings taken from the boiling hops. Can anyone confirm this for me?

I`d just go with 5g of each as the same amounts of each are in at the start and with 10 mins to go, but thats just a guess :D

I'm also confused by GW's instructions for the hop infusion, so some quick googling turned up this about Wadworth JCB:

If correct, this suggests that the 10g for the infusion are in addition to the quantities of hops for the 'Start of boil' and 'Last 10 mins' additions, and that the infusion should use Goldings.

I doubt it matters that much in this case, but it's nicer to have a clear understanding of the recipe as intended. :)

P.S. I guess that GW added the black malt to his recipe for colour correction purposes.

That's not how I read it.

Besides, if you take from the boiling hops, you're going to reduce EBUs from the 35 stated in the recipe, to about 30. Easy enough to try it in whatever brewing software you use.

I used 5g of each and just followed the instructions. Came out nice.
