Brewdog 5am Saint Recipe

Hello all.

I am new to the forum. I have been brewing for the past two years after my Dad handed me all his old brewing equipment. So far I have brewed IPA's, Bitters, and Milds mainly to traditional recipes. Milds being by far my favourite brew.

However I have been wanting to brew something slightly different using new malts and hops so have decided to brew a 5am Saint clone.

Recipe as follows.

Grains
5kg Pale Malt
0.5kg Crystal
0.5kg Munich

Hops
5g Amarillo (8.9%) - 60 mins
5g Herkules (16.1%) - 60 mins
10g Amarillo - 30 mins
10g Herkules - 30 mins
5g Amarillo - 5 mins
5g Cascade - 5 mins
20g Amarillo - Dry 3-6 days
20g Cascade - Dry 3-6 days

OG - 1.049 IBU - 28 (or there about) based on "brewpal" app.

As I remember 5am Saint has a slight bitterness but a large floral hop flavour. Please add your comments and/or suggestions to this recipe.

Check out my 5pm Devil recipe (see Brewdays forum - I posted the thread earlier today). It's my best guess based on a bit of searching of the forums, but I'm quite hopeful about it. I should have an idea by the end of the week if I'm anywhere near, so if I remember, I'll post it up on here. :)

I brewed my beer today. I changed the recipe a wee bit, mainly upped the hops. I made it as follows

Grains
5kg Pale Malt
0.5kg Crystal
0.5kg Munich

Hops
10g Amarillo (8.9%) - 90 mins
10g Cascade (5.9%) - 90 mins
25g Amarillo - 10 mins
25g Cascade - 10 mins
50g Cascade - flame out
20g Amarillo - Dry 3-6 days
20g Cascade - Dry 3-6 days

The brew smelt amazing. Lets hope it tastes great. Will post up the results when its ready.

I was just about to reply actually! My recipe seems to be pretty close, so far. The tasting is from the SG test earlier so it's a bit yeasty, but doesn't seem far off at all. That said, I don't think your recipe will be either - I think the key here is loads of hops and a decent malty backbone. This is the first time I've used Simcoe hops though and I can heartily recommend them!

I'm planning on attempting another 5am Saint clone using a kit. My previous attempt wasn't so successful, but my next attempt will be closer to the mark. I don't think Nelson Sauvin hops contribute a great deal to the dry hops in 5am Saint. 5am has a more piney dry-hop quality, probably from the Simcoe.

Thanks for the post Paddy.
I only used Amarillo and cascade which gave great results. Very similar yet not exactly like 5am saint. I greatly reduced my dry hops as I can find dry hopping a bit hit or miss and didn't want to mask the malt flavour too much. As a result the brew is a slightly toned down version of the original which suits me.
Will definitely be using cascade hops again. Such a lovely fruity flavour.

Cascade is a real winner alright. I think if I was limited to using one hop variety for flavour, Cascade would be it.

My next attempt at the 5am Saint copy will be going for broke as far as hops are concerned. I'm going for an 85g dry hop (mostly Simcoe, but also including Centenntial, NS and Ahtanum. I'm also going to steep some crystal malt aswell, to get that toffee like 5am character. I think you can only get so close to copying commercial beers when you're using kits. But I'm having fun trying, and that's what counts, eh? :)

If you've got some leftover Amarillo and Cascade you could combine them with some Simcoe to give you a "Trashy Blonde" type beer. This is also on my to-do list!

I am going to try your recipe. It looks delicious! (who cares if it is excactly like the 5 am Saint :lol: ) Do you reckon one needs to make some adjustments when using a 3 step decoction mash (it'll make it a bit sweeter and grainier. Maybe a bit less crystal malt?). Also, what type of yeast would you say works best? I had WLP002 in mind.

I want to change the dry hoping a bit to stick a little closer to what Brewdog use.
Currently in my hop stock I have :
Nelson Sauvin
Amarillo
Cascade
Simcoe

I don't have much experiance with different hop charaters yet so would someone be able recommend a tasty recipe from these.

Any help is much appreciated

For my AG3 tried out a similar recipe to those here, not exactly a clone but similar style. This is based on my available ingredients.

4.7 kg Maris Otter Pale Malt
0.5 kg Caramalt
0.2 kg Dark Crystal


15g Nelson Sauvin (90 min)
15g Cascade (90 min)
10g Nelson Sauvin (10 min)
20g Cascade (10 min)
20g Williamette (End)
20g Saaz (End)
25g Nelson Sauvin (Dry Hop 5 days)
25g Cascade (Dry Hop 5 days)

Nottingham Ale Yeast

Had a few issues during the brewing but in the FV for dry-hopping now and hopefully ready for this weekend.

hello,

I boiled up a 5am inspired brew this evening. I used some simcoes and nelson sauvin hops for the first 60 minutes (20 g of each) then another 5 of each for the last 6-7 minutes. I'm going to dry hop with some random amount of these. I've also got some cascade and amarillo in vacuum packs not yet opened and wondering whether to include some of them in the dry hop or keep them for another brew and just use the NS and Simcoe.

Anyone got any thoughts?

I'm using brupack amber malt extract and some spray malt and have steeped a bit of crystal to round it off a little - might be a bit far away from 5am anyhoo but I'll let you all know when its ready.
