whats your best guinness recipe?

looking at making 40litres of guinness made the one from graham wheelers book but something was quite a miss for me. what was your best recipe that was close to the real thing. i have been drinking some in my local and its fooooking lovely. what hops do they use at the present in the brewery? taste like challenger maybe northdown to me?

Most go for 70-20-10 using target to 45 IBU's

is that 70% pale malt 20% roasted barley 10% flaked barley?

TBH it's not going to make a massive difference in a stout IMO. I wouldn't waste an expensive liquid yeast on it - just chuck in some S04 or Notts.

Pale Malt 5 EBC 15 lbs. 11.9 oz 7140 grams 70%
Roasted Barley 1350 EBC 2 lbs. 4.0 oz 1020 grams 10%
Flaked Barley 0 EBC 4 lbs. 8.1 oz 2040 grams 20%


Hop Variety Type Alpha Time lb: oz grams Ratio
Target Whole 12.9 % 90 mins 0 lbs. 3.0 oz 87 grams 100%


Final Volume: 40 Litres
Original Gravity: 1.055
Final Gravity: 1.017
Alcohol Content: 4.9% ABV
Total Liquor: 57.2 Litres
Mash Liquor: 25.5 Litres
Mash Efficiency: 75 %
Bitterness: 45.4320206678874 EBU
Colour: 265 EBC

I think Beersmith over-estimates tre conversion of the flaked barley, so the OG will probably be a little lower than that, but not by a great deal.

Looks about right - basically it'll be like guinness, but better, of course!

do you actually think guinness use target hops? i dont and it certainly doesnt taste that way. and guess what they wouldn't tell me either i did email them they said if i knew that i woud probally give that information out and people will try and make it them selves!

I've used Target with this recipe or a very close one in the past and would agree with dave-o
Like guinness only better, with just a bittering hop adittion and all the roast in there hop variety isnt that important. I also chucked in a little Target at 10 mins, which I thought added a nice twist

In the 1990 camra guide graham w. used northdown and challenger for his genius stout. I've always used just northdown and it came out well.

You must have a very good palette to tell the diffrence in Hops in a Guinness. I have always used Northernbrewer but some recommend a mixture of NB and Target. As for Yeast why not use Nottingham.
