Hoppy wheat beers sound good. I have really enjoyed the few I have tried like three floyds gumball wheat, Mikkeller drinkin in the sun and dugges vetefan

I think keeping them low on IBU's and just adding enough late hops so that the aroma pops out of the wheaty taste is the way to go. Looks to me like your balance is about right. You dont want them being bitter...

Actually, scratch what I say, as I'm pretty sure all of those beers I mentioned will be cal ale yeast fermented like an american wheat beer. So no idea how the new world hops will fit with your hefe yeast. Never tried the Schneider Hopfen, but I love all of their other beers so will look out for it.

I really enjoyed the schneider - brooklyn beer... wait a minute, google says that is the Hopfen.

What temperature are you fermenting at? I did a Paulaner Hefe Weissbier clone a few weeks ago with WLP300, fermented pretty cool (17C) and it was VERY clovey, I've saved some of the yeast to do a dunkel weizen and I think I'll go a bit warmer to get more banana with this one. I have no idea what I'd do with the amarillo or nelson versions, I think either cool or warm would be interesting! I have to say I've never had a hoppy weizen but I like the sound of it :)

You do need to be a little careful with WLP300 though - pretty sure I'd read somewhere that if you get it warm (>20-22C) and it apparently starts chucking out fusels. 17-18C is bang on for me with my usual pitching rates.

Awesome was thinking of reclaiming some schneider weise yeast and making a hefe or 2 in next couple of weeks.
Got 2 packets of chinook sitting there, might have to rob your basic recipe and do a chinook hefe and see how that turns out.

A friend of mine does this a lot and it works really well, he has an amasing Citra version.

FIrst...sorry....haven't been around in a while. Haven't been brewing at all since before Easter.

Anyway. I'm doing a Weiss tomorrow morning and was just rummaging around in the hop fridge looking for some typical Weiss hops, but I don't have any. I do have Saaz (but I don't like this particular batch) and I do have Fuggles and Goldings and was just thinking what to use.

But I read this post - and I have LOADS of funky new world hops (including a kilo of citra).

So now I'm thinking about making it a bit "out there".

I'm using WLP300, haven't had time for a starter either so it'll be a straight pitch. The weather's fairly warm so it should get going OK and the small pitch will probably stress the yeast a bit and get it quite funky.

Hmm.....Citra, Amarillo, NS....? Who knows what tomorrow will bring....

You do have a history of heavy Hopping :)

Citra, Amarillo & Nelson Sauvin... any of them or all of them :) Its going to be a nice combo.

My WLP300 1 Litre starter will be having the beer decanted off the top and about 3 Litres more wort added today, so hopefully next Sunday I'll split it 3 ways and pitch one split into the first of these brews. I'm not sure which one yet, maybe keep things simple with the Hefe or Munich version first :)

Hi, looks like a great set of recipes!

I did a OG1042 American wheat with a IBU of ~28 with mount hood and its hoppy and just on the right side of the line of being too bitter...

Maybe my hop scales are out or my hop extraction was off but it could also be due to the fact this beer finished lower than expected at 1006!
(using notts as I didnt have any US05)

I'd do this one again with more hops at flame out and mash a little higher or maybe add some carapils (the mouth feel and head retention is a little lacking)

I've decided on the following hop schedule for today's Weiss:

20g 5.2% Bobek @ 45 mins (not FWH as I want to steal some "clean" wort for a starter for another beer)
10g 13.8% Citra @ 5 mins
10g 13.8% Citra @ Flame Out

This should give me about 12IBU - so within the bitterness limits for the style, but I'm hoping for more a big tropical fruit burst from the Citra hops to go with the banana esters of the yeast. Tropical Fruit Salad Weiss beer.....
