Not as red as I'd hoped. Does depth of colour develop while beer ferments and ages?

Matt's Beer Kitchen - London's Burning

2500g Pale Malt (2 Row) UK (5.9 EBC)
1750g Munich Malt (20.0 EBC)
400g Carared (50.0 EBC)
250g Caramel/Crystal Malt - 40L (60.0 EBC)
30g Black (Patent) Malt (1300.0 EBC)
30g Chocolate Malt (1050.0 EBC)

15g Nelson Sauvin [12.60 %] (90 min) (First Wort Hop) 21.0 IBU
10g Nelson Sauvin [12.60 %] (60 min) 11.9 IBU
10g Motueka [13.80 %] (30 min) 10.0 IBU
10g Motueka [13.80 %] (15 min) 6.5 IBU
1tsp Irish Moss (15 min) Misc
30g Motueka [13.80 %] (7 min) 10.5 IBU
35g Nelson Sauvin [12.60 %] (60 min) (Post-boil Aroma Hop-Steep)
50g Motueka [13.80 %] (60 min) (Post-boil Aroma Hop-Steep)
40g Nelson Sauvin [12.60 %] (Dry Hop 3 days)

Really hoppy this one, I'm hoping. I'm going to bung the dry hops in after the main part of fermentation is over, after about a week or so.

From my experience, CaraRed is disappointingly not-red.

Should taste good with all those hops though.

I'd second that, recently on my 5th attempt to make a Red Pale ale, tried CaraRed which was dissapointing, as was chocolate (it went brown!). Best result has been with standard Crystal malt so far. next up is Amber malt.

Any tips on getting a Red Pale* ale much appreciated.

* I appreciate this is a highly contradictory title! :-D

Just a tad of black malt gives the most red IME. It's still not very red though!

20grms in 23litres? or more?

Yeah something like 20g will give noticable colouration although i'd call it more reddish-brown than red.

IME that'll be something akin to Old Speckled Hen, which is kind of reddish.

Try CaraAroma for the red tint - it really works, but go easy on it. My last red was not bad hue wise with 15% Munich, 6% Crystal (70 SRM), 1.33% Chocolate and .66% Roast Barley BUT it was a little brown. Having done some tint tests on steeped versions, I think the Choc gives too many brown tones which muddy up the amber/red - and I could have avoided it if I had had some CaraAroma on hand...
