This is going to be to try and use some of the European malts I have which are ageing a bit so best use them up.
Originally I thought the pilsener Malt would benefit from a decoction mash and be nice to see how the darker malts caramelise nicely in the decoction boil. On balance having considered the proportion of grains I think it would be best to use that monster efoort of a triple decoction for my next high wheat creation - a dunkel to champion all dunkels.
By leaving out the choc malt and using the softer caraf III I'm hoping I can create something a bit different to the usual English mild. Following on from the recent discussion about oats I've thrown in 3% for a bit of body

Reminds me of TheMumblers 'Sieg Mild' made with all-Euro ingredients (pilsener, carafa special, tettnang and an Alt yeast) that was a cracker - looks/sounds good to me!

I think that was SF lager yeast actually. Your recipe looks promising be interesting to see how it turns out, I fancy doing another mild.
