I am planning an imperial NZ IPA. Since it has to get it all the way to NZ, im guessing it needs to be very imperial, with a MASSIVE IBU.
This is what I have come up with - critique welcome please!
I am using 2 bittering hops at 60m, to ensure there is a good depth of bitterness, since most of the bitterness is coming from the 10min additions. Also, Pacific Jade and Green Bullet both have characteristic bittering qualities. It may look like I am seeing it as a challenge to get the full 100g of each hop into the brew. Thats cos I am.
"Wreckless NZ IPA"
25L
OG 1062
ABV 6.3%
A smacking great 93 IBU's
MO Pale - 6600g
Carapils - 250g
Torrified Wheat - 100g
60min hops
Pacific Jade - 35g
Green Bullet - 10g
10min hops
Pacific Jade - 30g
Green Bullet - 30g
Nelson Sauvin - 30g
0 min hops (60 min steep)
Pacific Jade - 30g
Green Bullet - 30g
Nelson Sauvin - 30g
Dry hop
Pacific Jade - 30g
Green Bullet - 5g
Nelson Sauvin - 40g
Like i say - critique very welcome! My only worry, is that this will be kegged rather than bottled - so it wont be fizzy to lift the bitterness off the palate. But i like bitter.
Cheers!

..not sure what the rules are on bumping your own thread.. so sorry
Im wondering if i have too much by way of late additions, and too little earlier additions? I want deep full rounded bitterness, with full frontal hoppiness in flavour and aroma..

Re: Wreckless NZ IPA
Your hops look fine matey. I wouldn't call 6.3% an imperial IPA though. you beed to be looking in the 7.3-10% ABV range.
that will help to balance the IBU's as well. Maybe think of using some sugar to 'thin' it out, or you run the risk of it getting cloying.

hope it goes well

Hi
I'd be inclined to agree with LB on this one...
A pound or so of cane sugar added late on in the boil (15 min) should do the trick.
It will thin the beer out (as the belgians do with their bigger ales) to prevent it from being too cloying - I understand its fairly common practice even in IPA's with a lower OG than what you are aiming for.
A pound of sugar in a 23l brew should also get you into the lower end of the Imperial IPA guidelines.
Good luck & and let us know how it goes!

Good shout... I was worrying about that, and since its going in a pressure barrel (bar a few bottles) it will def benefit from thinning!
