Ditch the 40min hop addition, make up the IBUs with extra @ 60mins and add the remainder at power off ? :)

Yeah ditch the 40mins, but there are reports of a very harsh piney bitterness from too much at 60mins... Maybe a 30mins instead 40mins?

its fine, id ditch the 40 min too. i do a cracking all chinook thats one of my best sellers. i add the equivalent of 28g per 10 gall @90 and hop bomb in two additions of 60g, 1 @ 10 and one @ 0, then steep for 40 mins to an hour before chilling. real bitter bite, real grapefruit flavour, well smart!

WLP001 is very nice but dont expect it to be very flocculant. It floats around in the bottle with the slightest knock.

Crash cool it at 5C for about 4 days, and then bottle it with some primings when it looks to be clear. There'll be enough yeast cells in there to condition it, and you land up with only a fine dusting over the bottom of the bottle which sticks well enough to pour :D
