I've never used Galaxy before and I've only ever tried one commercial brew that uses them (Thornbridge Galaxia) so I'm open to suggestions from anyone more knowledgeable than myself

After the ferment is done and I rack off to keg/bottles I want to re-use the yeast cake to brew something more like 8% ABV and 100 EBU's but at a smaller length of 15 ish litres. I'm thinking of using some Carared to get a good red colour to it but this is a new malt for me, how much should I use to get the colour? Would a kilo be OK in a 5 kilo grain bill? Beer Engine gives me a colour of 35 EBC but I have absolutely no idea what this means in terms of redness, does it look OK? This will go in 330ml bottles and should be ready in time for my birthday in May
