SWMBO's off to visit a friend of ours in France on Thursday and I'm staying at home to look after the dog (I'm too soft to put him in kennels for a week) so I've got a brewing weekend lined up, yay! Thanks to deanrpwaacs I'm now the proud owner of 500g of super-cheap Galaxy hops :D so I want to get stuck in with a nice pale to see what they're like. I'm thinking of:

Maris Otter 4300g
Munich 500g
Wheat Malt 200g

Mashed at 65C for 90 minutes with CRS to pale ale profile and 1 tsp gypsum

Galaxy 13.8%AA 20g 90 minutes
Galaxy 13.8%AA 25g 15 minutes
Galaxy 13.8%AA 25g 5 minutes
Galaxy 13.8%AA 30g 0 minutes
Glalaxy 13.8%AA 50g dry hop

Ferment with US-05 at 18-20C

OG 1.052 (predicted)
FG 1.012 (predicted)
Bitterness 40 EBU (utilisation adjusted to 30% in Beer Engine - this is a guess but is probably more realistic than the default 39.75% given my set up)
Colour 11 EBC

I've never used Galaxy before and I've only ever tried one commercial brew that uses them (Thornbridge Galaxia) so I'm open to suggestions from anyone more knowledgeable than myself :mrgreen:

After the ferment is done and I rack off to keg/bottles I want to re-use the yeast cake to brew something more like 8% ABV and 100 EBU's but at a smaller length of 15 ish litres. I'm thinking of using some Carared to get a good red colour to it but this is a new malt for me, how much should I use to get the colour? Would a kilo be OK in a 5 kilo grain bill? Beer Engine gives me a colour of 35 EBC but I have absolutely no idea what this means in terms of redness, does it look OK? This will go in 330ml bottles and should be ready in time for my birthday in May :D

Hello Lugsy.
I also did a brew at the weekend with the Galaxy hops.
I have 5 other brews to get on for christmas but as they smell so good i just had to do something.
I had a bit of grain left over so did as follows,no idea how it will turn out but it smells bloody good.

Pale malt 3800g
Caramalt 500g (I had no tory wheat left)

Mashed at 66c for 90mins with not water treatment(to tight and lazy :roll: )

Target 11.4% 16g 90 mins
Galaxy 13.8% 30g 15 mins
Galaxy 13.8% 25g 5 mins
Galaxy 13.8% 15g 0 mins
Galaxy 13.8g 43g 80c steep for 20 mins

Fermenting with Hop Back Yeast at 20c pitched and munching already.

OG 1.042
FG 1.008 (this yeast drops low)
Bitterness 45
Colour 11 (spooky)
Should end up around 4.3%.
The only beer i had with galaxy was old golden hen and it wasnt all that to be honest so i hope this will come out better.

St. Austell Trelawny also uses Galaxy in it
