Three Shades of Stout

Second brew of the weekend and an unfortunate omission in my last order from The Malt Miller (don't make orders in a rush after a couple of beers :oops: ) means I don't have any amber malt so my plan for the Four Shades recipe has come up one short. I decided to substitute some Munich in the end - not even remotely like Amber but I didn't want to put any more dark grains in and I've got loads of it. Here's what I'm going with:

Grains:
Maris Otter 3250g
Munich 500g
Flaked Barley 500g
Pale Chocolate 250g
Roast Barley 200g
Carafa Special II 200g

Mashed at 65C for 90 minutes

Hops:
Cascade 5.5%AA 60g FWH

60 minute boil

I've just put the first runnings and FWH on to boil, the first sparge will be added any minute.

I'm not sure about yeast yet, it'll either be S-04 or Windsor - I've never used Windsor but it might not attenuate far enough, any thoughts?
