Which yeast?

Hi

I thinking about an IPA 95% MO 5 % Dark crystal, about 5% ABV Hopped with EKG.

I have

1) Scottish Ale yeast
2) English Dry
3) Nottingham
4) Yorkshire square

I'm thinking using the Scottish Ale yeast at about 22C, to get some esters going. (Scottish IPA?)

I normally do Scottish ale yeast at 18C, which ends very clean, so have any idea what I will get and whether it will work?

Any help, ideas?

When you say English dry do you mean WLP007? It's a good yeast for IPA.
I'm just here for the beer.

I've just done one with the yorkshire square! haven't tasted it yet but hope it's gonna be ok! :D

Hi

I should have said that English Dry WLP007, is my normal choice for most ales. (It is my house yeast, if I had such a thing)

However I want to try another yeast in this one. I'm tossing up between Yorkshire Square (Which I haven't used before........Which I suspect will need a good amount of 02 pumped in to start, as it is very floccuant and Y Sqaures apparently allow for O2 uptake..not that I have ever used a Yorkshire sqaure...but I digress ) and Scottish Ale which I have used many times before

So, the choice is
1) Use the one I know like the Back of my hand
2) try one I don't know at all
3) Or go for one that I know pretty well, and fiddle
