Wheat beer

I've almost used up everything in my breweing cupboard but I happen to have a vial of expired american wheat beer yeast that needs using up so I'm planning the following:

Batch size 19l
Og: 1.048
EBU 18
Malts:
Pilsner malt: 2,000g
Wheat malt: 900g
Torrified Wheat: 1,000g
Porridge oats: 500g
Hops:
Tettnang: 30g (60 minute boil)
Tettnang: 10g (at 80 degrees)

Ferment at 19 degrees C and hope for the best.

Thats all the Wheat malt and torrified wheat that I have at the mo, any comments? I've got a starter on the go with the Yeast at the mo so going to try to brew one evening this week

I wouldn't use a kilo of torri. It can add a bit of an unpleasant taste. Unmalted wheat would be the best bet there IMO.

What yeast will you use? I've used WB06 to a good result previously. I also toasted some coriander seeds and added tangerine peel, then a camomile tea bag. Was a decent brew.

see what you mean, I'm going to delay this untill my order from Rob arrives and then just up the wheat malt to 2KG anf drop the torri to 400g.

Sound any better?

I don't see the point of any Torri. It's out of style and can affect taste.

Why are you using it? As a sub for flaked wheat? If you want to make a Wit then you need flaked, otherwise make a weizen and just use wheat malt.

I though that you could use flaked wheat and torri more or less interchangably?

Now I need to find some where that sells wheat flakes near me!

That's what i thought until i subbed 2kg of wheat malt for 2kg of torri and ended up with a practically undrinkable ale.

Health food shops often sell flaked, or if you are ordering other stuff online, maltmiller sells it.
