Hi!
Both look good (In fact I may crib no2) another option is a us Wheat if you have about1500-1800 gram of wheat malt knacoking about... They are usually Less than 50:50 Wheat: Barley malt more like 30:70 Wheat:Barely -but pale and plenty hoppy!
On a side note is this the first time you will be using the UK cascade?

I've actually got plenty of wheat malt.
This would be my first go with UK cascade, hope they are good.

Hmm
Maybe a wheat beer is an idea? but they are best drunk young (as you know) so if you can drink it then do it otherwise I'd say recipe 2 is the one to go for...
I'm sure the UK cascade will be good, but let me know what you think...
I'm planning a Summit (bittering) and UK cascade (Late) brew soon...

yummy. might get one on myself this weekend. but finding places for 3 fermenters is going to be hard lol. but i do have about 100 emptys that need filling?????
