Adding fruit to a begian ale

Post by dean_wales » Sat Apr 21, 2012 7:50 pm

Hi guys,

I was thinking about adding fruit of some description to part of the next belgian blonde batch I make.

What are my options?

My usual grainbill is about 10% white sugar (which I can add to FV to allow for a split 2 x FV batch), should I drop the sugar for part of the batch and replace it with a good quality fruit suryp or cordial? Or is it best to add actual fruit?

I would like the beer to either stay blondish or go a nice red colour. So I am thinking its either peaches, apricots, rasperries or strawberries.

I have tried some nice fruit beers so I know I like the flavour of fruit in a beer but dont want to be too experimental first time around.

Suggestions please!

I think I prefer the idea of strawberry to raspberry. Cant find much in the way of peach and apricot additions.

Options so far:

Frozen strawberries. Blended, pasturised and added to secondary - http://www.tesco.com/groceries/Product/ ... =268620973
Lowicz syrups
