I was going to use US 05, is that right? I also have some 04.

I think either will work, but in my admittedly limited experience, US-05 will favour hop flavours more whereas S-04 will be maltier. If you're after tasting plenty of the honey then S-04 might be the better bet, but I'd give others a chance to correct me... I wouldn't want to give you a bum steer.

S04...super fast and a clean profile that might leave some of the honey flavour to make it through.

Sorry to jump on your post, but I've just started playing with Beer Engine and wondered if you are using the default hop utilisation setting?

AG#42 - Heritage Double Ale - 10.5%

On Tap:
AG#44 - Harvest ESB - 5.4%
AG#45 - Amarillo Gold APA - 5.2%
