This is what I am planning for my 7th Mini-BIAB.

Any thoughts and suggestions would be gratefully received :D

8.0 g 2011 Cluster Leaf 7.80%AA @ 60 Minutes

I personally think that you should do a couple of things. First of all, I would bump the O.G. a bit, say around 1.055 (for some reason, us Yanks just don't make session beers all that often). Secondly, I would target an IBU/O.G. ratio that is a bit lower, maybe .60 or so then add hops late so it reeks like a cross between a grapefruit and a pinetree. You want the beer to be bitter but not so bitter that it tears your head off, that is what IPA's are for. You will find that Chinook hops are extremely agressive and depending on your water can make for a harsh bitterness. Of course, Stone Brewing in California is making a small fortune doing beers like that so I know there is a big following. Incidentally, we have recently been able to obtain Ballist Point beers here in Texas and their amber ale is very good, give it a try if you enjoy that style.

Conditioning: Traditional bock bier, CAP

Next up: Bitter (London Pride like), ESB

I am trying to use up some malts, so only have 500g of Lager malt to help bump up the OG?

Not sure if you misread my post or made a typo, but I am not using any Chinook :?
