Hi all, after having no luck finding a clone recipe for the Temptation Stout I decide to contact the Durham Brewery directly and ask for some hints/tips for cloning their stout and got this reply
You will need a lot of malt, about twice as much as for a mid strenght
beer of around 5% abv. For instance, we us 300kg malt in 10 barrels of
5% and 600kg in 9 to 10 barrels of Temptation. You will also need double
the amount of yeast. Use pale, brown, amber, roast barley and possibly
some crystal. Use English hops, goldings and fuggles. Sweetness is easy
because the final gravity is high when using so much malt.
Temptation is made from original 19C recipes of Russian stout so try
looking for authentic recipes for more clues.
A little more research for authentic recipes then I will have a go at brewing my own version
