Hello everyone! I attended a big beer festival this weekend and had a single-hop Galaxy IPA. Now, this is just my opinion, but the hops aroma was AMAZING, but the bitterness and flavor were awful. I'm sure this particular beer could be somewhat improved by reducing the amount of early hops and adding some complexity to the grainbill...
But, anyone else feel the same way about Galaxy hops? I think this was my first chance to train my palate to a predominantly Galaxy beer. I've seen lots of recipes on Jim's Beer Kit calling for Galaxy as one of many hops, but never the main one.
Based on this one beer at least, it seems like an IPA recipe with a better bittering hop and all Galaxy hops for aroma could be delicious.
Comments? Rebuttals?

Or how about no early boil hops with all galaxy added late?

Might work, but wouldn't the beer be cloyingly sweet if there was no hops bitterness to balance it? Have you ever brewed something along these lines?

I have recently started doing an Apollo single hop with 10 min 10g addition,5 min 20g addition then at 0 min chuck in 70g and steep for 40 min.
Then dry hop with shed loads more.Makes a craking pint and im now on my second batch.
Maybe you should try something along these lines.

Galaxy is awesome. Them Amarillo, NS, NZ Cascade and Green Bullet makes this brewer a happy bunny.

IMHO using Galaxy early in the boil can result in harsh undesired flavours and when used later it's still best when combined with other hops (like Cascade).

so seymor, did u try this or did you come up with a combo bittering hop to go with the galaxy aroma additions? i can get galaxy, and was considering doing one of my weekend boil pots galaxy only... but then i read this. so... what was your conclusion?

I haven't put it to the test yet, but I like what these other guys had to say. If I were you, I'd use a bittering hop that I know I enjoy (Northern Brewer, Challenger, Centennial, Crystal, Magnum, etc), and save the Galaxy for later in the boil and dry-hopping. Best of luck!
