Fuller's Golden Pride

Post by Pinto » Sat Jan 26, 2013 12:11 am

After supping one of these tonight I decided to look around for a clone - not a lot out there, but found some useful info from Fuller's themselves... so what I have so far...

Fullers Golden Pride Clone (English Barleywine)

Original Gravity (OG): 1.090 (°P): 21.6
Final Gravity (FG): 1.023 (°P): 5.8
Alcohol (ABV): 8.84 %
Colour (SRM): 11.6 (EBC): 22.9
Bitterness (IBU): 53.3 (Average)

95% Pale Ale Malt
5% Crystal 60

2.6 g/L Target (9% Alpha) @ 60 Minutes (Boil)
1.7g/L Challenger (6.1% Alpha) @ 15 Minutes (Boil)
1.7 g/L Northdown (8.1% Alpha) @ 15 Minutes (Boil)
0.7 g/L Challenger (6.1% Alpha) @ 0 Days (Dry Hop)

Single step Infusion at 64-65°C for 60 Minutes. Boil for 60 Minutes

Pitch @ 17 deg / Fermented at 20°C with WLP002 (English Ale Yeast)

Recipe Generated with BrewMate

The base recipe is very straight forward, but Im struggling with the hop schedule - I know that Fullers use Target as their primary bittering hop, and the citrus/fruit/toffee flavours are strongly mentioned in tasting profiles so I want a nice late addition on some Challenger to get these charecters into the brew. I also know northdown features but its not a hop I know and I cant find a lot on its flavour profile (appears to have similar charecter to Challenger) so i've added it in late as well. Im guessing that more challenger is used for aroma on the dry hop too.

How is it looking ? advice welcome !

As per John Keeling, the hop schedule for ESB/London Pride party gyle is as follows...

Hops - Bittering - 100% Target [80% of bitterness]
Hops - Aroma [2-3 mins] - Northdown & Challenger & 10% Goldings [20% of bitterness]
Whirlpool and allow to stand for 30 mins.
Dry hopped in fermentation and maturation tanks.

ESB is matured for 4 weeks before bottling. Dry hopped in cask.

...presumably, Golden Pride will be fairly similar.

I believe ESB is the only 1 of the 4 (G.Pride, ESB, L.Pride, Chiswick) thats dryhopped.

that should outline their setup, and by extension from it i believe you could work out Golden Pride just by increasing ingredient quantites/boiling longer on the esb recipe?
