I wondered if anyone could bash up a couple of (or three) good recipes with this lot..

Pale Malt loads
Torrified Wheat 359g
Crystal Malt 332g


Bramling 9g

Stella Hop 40g
Citra 37g
Golding 24g

Progress 56g
Challenger 106g
Target 7g
Magnum 57g
Summer 10g
Northdown 100g

Household white sugar 1kg
Yeast

Gervin English Ale
Safale US -05
Safale S -04


I don't want anything above 4% and could do with enough left over to make a third brew before spending more money.

I would go for a Hoppy Pale ale, with pale malt and all the torrie wheat, hopped with magnum, citra and mabye summer/stella using US-05. And then use up all the crystal with pale malt to make an english style pale/bitter with challenger to bitter and fuggles goldings and bramling for the aroma going with S-04 or Gervin. Then go for a all pae malt pale ale with whatever hops you have left....

Ahh, Fuggles should not be there.

I would not mind getting the Magnum used up.

#1 of 3: SEYMOUR - MORRELLS VARSITY BITTER CLONE
The pint of choice for C.S. Lewis and J.R.R. Tolkien during the Oxford years.

6 US gallons = 5 Imperial Gallons = 22.7 Litres

GRAINBILL:
83.3% = 7.6 lb = 3.45 kg, English Pale Malt
8.7% = .79 lb = 359 g, Torrified Wheat
8% = .73 lb = 332 g, English Crystal Malt

MASH at 151-153°F/66-67°C for 90 minutes

HOPS:
.6 oz = 17 g, Challenger, 60 minutes
.25 oz = 7 g, Target, 60 minutes
.3 oz = 8.5 g, Goldings, 30 minutes
.55 oz = 15.5 g, Goldings, 5 minutes then steep until chilled

YEAST:
Safale S-04/Whitbread-B, ferment warm around 70°F/21°C

STATS (assuming 75% mash efficiency and 75% yeast attenuation):
OG: 1042
FG: 1011
ABV: 4%
IBU: 30
COLOUR: 9°SRM/18°EBC

I'd boil 60 minutes, because I don't think it makes a difference, but some would insist 90 is more authentic.

P.S. Did you know the official name of your "Stella" hops has been changed to "Ella" because of a lawsuit by Stella Artois? Silly, huh?

#2 of 3: SEYMOUR CITRA GOLD
A light, crisp, refreshing, citrusy and hoppy American ale.

6 US gallons = 5 Imperial Gallons = 22.7 Litres

GRAINBILL:
97% = 8.54 lb = 3.87 kg, English Pale Malt
3% = .26 lb = 118 g, Oats (from your kitchen: porridge, flaked, rolled, quick, pinhead, etc)

MASH at 150°F/65.6°C for 90 minutes

BOIL 60 minutes, adding a pinch of gypsum, add a little orange or clementine peel at 5 min remaining, if you got it.

HOPS:
.4 oz = 11.3 g, Magnum, 60 minutes
.65 oz = 18.4 g, Citra, 15 minutes
.65 oz = 18.4 g, Citra, Dry hops added to secondary fermentation

YEAST:
US-05/Chico, ferment warm around 70°F/21°C, don't filter nor use any clarifying agents, some chalky haze is nice.

STATS (assuming 75% mash efficiency and 75% yeast attenuation):
OG: 1043
FG: 1011
ABV: 4.1%
IBU: 31
COLOUR: 4°SRM/8°EBC

"Single Malt and Two Hops"

6 US gallons = 5 Imperial Gallons = 22.7 Litres

GRAINBILL:
100% = 8.65 lb = 3.87 kg, English Pale Malt

MASH at 152°F/66.7°C for 60 minutes

BOIL 60 minutes, add Irish Moss at 15 minutes remaining.

HOPS:
.5 oz = 14 g, Progress, 60 minutes
.14 oz = 4 g, Styrian Goldings, 60 minutes

.74 oz = 21 g, Progress, 30 minutes
.23 oz = 6.5 g, Styrian Goldings, 30 minutes

.74 oz = 21 g, Progress, boiled 5 minutes, steep until chilled
.23 oz = 6.5 g, Styrian Goldings, boiled 5 minutes, steep until chilled

YEAST:
Gervin English Ale Yeast/Nottingham, ferment warm around 70°F/21°C

STATS (assuming 75% mash efficiency and 75% yeast attenuation):
OG: 1.041
FG: 1.010
ABV: 4%
IBU: 31
COLOUR: 4°SRM/8°

Agreed. Looks great, but can't get citra for the life of me. Would it work with galaxy? Might be worth a shot. How much more pale would you add to get it up to 5%?

Would Amarillo be a good sub? Pale Malt 5070g and 158g Oats would give you 5%.

Of course. Any bold, citrusy hop will work just as well, including English varieties such as First Gold. Citra is very nice, but I specified it because he already had it. Galaxy is phenomenal as a late hop. Amarillo, as he said, is great too.

Sadly, I miss counted and don't have the Styrian Goldings for the SEYMOUR ENGLISH SMaTH BITTER.
